Ahi Tuna with Citrus Ponzu Sauce

Citrus Ponzu Sauce

5 oz tamari or soy sauce
1/2 cara cara orange juice + zest
1/2 Tbsp pineapple habanero hot sauce
1 Tbsp white sesame seeds
1 Tbsp rice vinegar
1/2 Tbsp mirin
1 oz yuzu juice
1 tsp minced jalapeño
1/2 tsp minced ginger root
1/2 tsp minced garlic
1/2 tsp minced shallot
pinch red chili flakes
2 oz water
pinch bonito flakes
2 sheets wasabi nori
1 Tbsp toasted sesame oil

Combine all ingredients except the sesame oil in a blender, blend on high. Slowly drizzle sesame oil in while the blender is running to emulsify. Strain through a fine chinois into a bowl. Add sashimi of choice and marinate in the refrigerator for 15 minutes. Garnish and serve.
